I have the coolest neighbors. Like Nicole and Jesse. Family meals have always been important to the Vickey’s, but as their family grew, so did the demands on their time. Like most families, they found it harder and harder to gather for that sacred hour called Family Dinner. They noticed it wasn’t just them — their friends and neighbors were all struggling to keep family dinner time a priority, too. So, Nicole and Jesse rolled up their sleeves and did something about it. This entrepreneurial couple created Dinner Elf.
If you are lucky enough to live in Austin, you can have an elf {aka a cook} come into your home with a bag of groceries, prep, cook, and clean your kitchen leaving fully prepared meals in your fridge. Sounds like a dream huh? Who wouldn’t want a dinner elf?
The Vickey’s are also Front Yard People. This is a snapshot of Jesse’s attempt to surprise Nicole for mother’s day with her turquoise table. I died laughing when I saw the photo. Clearly, Nicole was not surprised, but she was grateful.

Trust me, with the heat of summer you’re going to be thankful for this refreshing dip. It’s great for a gathering or sitting poolside with a girlfriend.

Keep cool as a cucumber with this simple and refreshing dip. Serve poolside or at your turquoise table for a quick snack or appetizer. So easy the kids can make it!
Ingredients
- 1 cup plain yogurt
- 4 oz cream cheese, softened
- 1 cucumber, peeled, seeded, and diced
- 1 garlic clove, minced
- 1 green onion, thinly sliced
- 1 teaspoon lemon juice
- 1 tablespoon fresh dill or 1 teaspoon dried
- salt & pepper
Instructions
- Mix all ingredients together until well combined. Serve with crunchy veggies — carrots, bell pepper slices, broccoli, and pita chips.
